Vicky’s date and walnut loaf
This simple and delicious cake has an added boozy suggestion!
Ingredients
- 350g dates, chopped
- 1 mug of black tea
- 100g walnuts, chopped
- 1 egg
- 175g self-raising flower
Method
- Soak dates in black tea overnight.
- Mix walnuts, egg and flour together and add the soaked dates and tea.
- Bake in oven at 180ºc, gas mark 4 for 1 hour.
Variations
- Substitute flour for almond flour/ground almonds, or half flour and half almond.
- Adding a glug of amaretto or brandy for a Christmas version.
