Zara’s Yorkshire parkin

Definitely an autumn favourite – perfect for bonfire night!

Zara’s Yorkshire parkin

Ingredients

  • 225g unsalted butter
  • 110g golden syrup
  • 110g black treacle
  • 2 large eggs
  • 125ml milk
  • 225g plain flour
  • 1 tsp bicarbonate of soda
  • 2 tbsp ground ginger
  • 1 tbsp cinnamon
  • 225g dark brown sugar
  • 225g oats

Method

  • Preheat the oven to 170ºC and line a brownie tin with baking paper
  • Put the butter, golden syrup, and treacle in a pan and heat until melted and put to one side
  • In a large bowl, combine the flour, oats, sugar, bicarbonate of soda, and spices
  • Mix the butter and syrup mixture into the dry ingredients
  • In a jug, beat together the eggs and milk. Add this to the mixture and stir well
  • Pour the mixture into the brownie tin, and bake for 40-45 minutes, until the Parkin has risen and springs back when pressed lightly with your fingers (it’s ok if it sinks a little – it will still taste great!)
  • Leave to cool completely before removing from the tin, then cut into around 16 squares, wrap in baking paper and keep in an airtight container

(Yorkshire Nanas advise that it gets stickier after a couple of days -that’s if you can wait!)
