Susie’s cheese and pumpkin seed scones

For those of you with a savoury tooth!

Susie’s cheese and pumpkin seed scones

Ingredients

  • 225g self-raising flour
  • 55g butter, cubed
  • 25g strong cheese (such as extra mature cheddar), grated
  • 100ml milk
  • 1 egg
  • 1 teaspoon of cayenne pepper or mustard powder
  • Salt and pepper
  • Handful of pumpkin seeds

Method

  • Mix flour, salt and pepper and cayenne or mustard powder in a bowl
  • Rub in the butter
  • Add in the cheese, then the milk and egg (reserve a bit for glazing)
  • Bring to a stiff dough and place on a floured board
  • Press or roll to a thickness of 2.5cm
  • Gently use a cutter to make approx. 8 scones
  • Sprinkle with seeds, brush with egg, place on a lined baking tray, and bake for 15-20 minutes at 200ºC
  • Eat the same day or freeze
