Susie’s cheese and pumpkin seed scones
For those of you with a savoury tooth!
Ingredients
- 225g self-raising flour
- 55g butter, cubed
- 25g strong cheese (such as extra mature cheddar), grated
- 100ml milk
- 1 egg
- 1 teaspoon of cayenne pepper or mustard powder
- Salt and pepper
- Handful of pumpkin seeds
Method
- Mix flour, salt and pepper and cayenne or mustard powder in a bowl
- Rub in the butter
- Add in the cheese, then the milk and egg (reserve a bit for glazing)
- Bring to a stiff dough and place on a floured board
- Press or roll to a thickness of 2.5cm
- Gently use a cutter to make approx. 8 scones
- Sprinkle with seeds, brush with egg, place on a lined baking tray, and bake for 15-20 minutes at 200ºC
- Eat the same day or freeze
